Santa Inés, E-11
“E” represents the best wine we can produce in each vintage. Sometimes it is the result of a mixture of varieties coming from a selection of barrels, and other times from a specific vineyard that during that year proved to be outstanding.
“E” refers to the elegance and enigmatic character of this wine which represents our style in its highest expression.
E-11 marks the lastest version of “E” which released to the market.
Characteristics
Tasting Notes:
Bright, ruby red colour with a garnet rim. The wine shows great aromatic complexity with notes of black cherry, liquorice and sweet spice from well integrated oak. It is starting to develop refined tertiary notes of forest floor. The palate shows great integration of the intense fruit core with the crisp acidity and fine grained tannins that lead to a very long finish.
Decanting: not nessessary
Gastronomy:
Ideal to pair with beef, lamb, poultry and aged cheeses.
Vineyards:
The climate here is Mediterranean style, considered mild by Chilean standards, with significant diurnal temperature variations, which support the creation of high quality tannins. Maximum temperatures during the summer’s hottest months can reach 30°C, but given the proximity of the Mataquito River, cool breezes from the Pacific Ocean help keep the afternoons fresh, creating excellent ripening conditions for the various grape varieties.
This soil profile is quite deep, with clay and granite deposits which give the soil a reddish colour and produce special conditions which allow for the humidity retention throughout the ripening period, as well as permitting this to be a dry-farmed vineyard. The grapes were harvested on March 20th.
Ageing method:
The grapes are de-stemmed and then gently pressed, undergoing cold maceration for seven days. Alcoholic fermentation is then carried out with native yeasts and afterwards, the wine is left in contact with the skins for 60 days. The wine is aged in 5.000 liter foudres for two years.
