Our Santa Ines Classic wines are made in a fresh style that highlights the fruit and terroir expression of each carefully selected region of origin. The aromas of lime and passion fruit lead to a medium bodied dry palate. Rich and intense fruit characters is well-balanced by a crisp acidity, moderate alcohol and soft texture with charming and persistent finish.

Tasting Notes:
Fresh and intense aromas of lime and passion fruit lead to a medium bodied dry palate. The wine showcases a rich and intense fruit profile that is perfectly balanced by a crisp acidity, moderate alcohol and a soft texture with an attractive and lingering finish.

Gastronomy:
Ideal to pair with shellfish, vegetarian and goat cheeses.

Vineyards:
Cool coastal climate and decomposed granite soil. The grapes were harvested during the third week of March.

Ageing method:
The grapes were destemmed and pressed gently to avoid extracting bitter phenols. The juice was left to settle and then put into stainless steel vats where the alcoholic fermentation took place with natural yeasts at temperatures ranging between 14-16°C. Malolactic fermentation was blocked and the wine aged over its fine lees for several months.

The serving temperature is extremely important and crucial to unlocking the full flavour and aromas of a wine. It is important to remember that each wine has an ideal serving temperature and one temperature is not suitable for all.
